O Chipe Libre tem um conceito magnífico, acabar de uma vez por todas com a disputa controversa gerada pela bebida Pisco, que tem sua nomenclatura disputada por Chile e Peru.

Existe uma rivalidade histórica entre o Chile e o Peru sobre a exclusividade de se usar o nome “Pisco”. Desta controvérsia surgiu o conceito do gastropub: “Chi” por Chile, “Pe” por Peru e “Libre” por não pertencer a nenhuma das duas nacionalidades, ou ao mesmo tempo pertencendo à ambas, daí a continuação de “La República Independiente del Pisco” uma república própria, um micro país imaginário onde se pode desfrutar do melhor destas duas nações.

Fomos atendidos pelos garçons Pablo e Allan que nos explicaram cada detalhe dos pratos servidos. Como é costume em todos restaurantes de Santiago o couvert chega rapidamente à mesa e não é cobrado. Aqui experimentamos um delicioso Camote Frito (uma espécie de batata doce) acompanhado de Salsa Chipeña, o molho da casa, de sabor complexo e levemente picante.

Optamos pelo menu degustação e tivemos a oportunidade de provar muitos pratos. A dica para quem deseja um menu degustação é ligar com no mínimo 24 horas de antecedência e fazer a reserva.

Nosso banquete começou com Choros Malton a la Chalaca (mexilhões cozidos cobertos com um mix de vegetais) picante e com sabor de mar; Cebiche de Camaron, com o acertado “leche de tigre” fresco feito na casa (resultado de suco de limão, pimenta, cebola, alho-poró, coentro, alho, gengibre e caldo de peixe); Erizos al Matico Chipeño & Crocante de Cochayuyo (uma alga típica chilena, seca e frita).

Seguimos com Tataki de Salmon & Tartar de Quinoa en Masa Wantan y Salsa de Mango, o salmão é “Dos Deuses”, também não poderia ser diferente depois de ficar marinando durante horas antes de ser cortado e servido; Centolla Magallanica y Panna Cotta de Palmitos en Leche de Tigre, a centolla é aquele delicioso caranguejo gigante chileno, aqui ele vem desfiado e muito bem preparado.

Para finalizar esta sequência: Causas Republicanas, um tipo de sushi peruano que no lugar do arroz são utilizadas batatas. A verde é com molho de espinafre recheado com polvo e a amarela é recheada com camarões.

Os pratos principais foram Pulpo a la Grilla y Picante de Papas, um polvo servido com um molho de pimentões vermelhos e uma combinação de diversas qualidades de batatas chilenas e peruanas. Lomo Saltado, Arroz & Papas Fritas, um prato clássico peruano com lombo. O toque de sabor do Chipe Libre é acrescentado no momento em que, ao saltear o lombo, o chef flamba a carne.
