O Chipe Libre tem um conceito magnífico, acabar de uma vez por todas com a disputa controversa gerada pela bebida Pisco, que tem sua nomenclatura disputada por Chile e Peru.
Existe uma rivalidade histórica entre o Chile e o Peru sobre a exclusividade de se usar o nome “Pisco”. Desta controvérsia surgiu o conceito do gastropub: “Chi” por Chile, “Pe” por Peru e “Libre” por não pertencer a nenhuma das duas nacionalidades, ou ao mesmo tempo pertencendo à ambas, daí a continuação de “La República Independiente del Pisco” uma república própria, um micro país imaginário onde se pode desfrutar do melhor destas duas nações.
O ambiente do restaurante é despojado e alegre, tudo relacionado a temática principal, trazendo elementos da fusão entre o norte do Chile e o sul do Peru com diversos manifestos e simbolismos que remetem a uma revolução.
Os frequentadores vão desde casais apaixonados, solteiros se divertindo, grupos de amigos e até reuniões de negócios. Tem espaço para todo mundo, seja no terraço com mobiliário confortável e espaço ao ar livre ou na área interna com muitos detalhes em madeira, estilo rústico e iluminação harmoniosa.
A casa se divide entre os premiados bar e cozinha. Começando pelo bar, pudemos conhecer e desfrutar de uma ampla carta com rótulos de piscos chilenos e peruanos, na verdade, aqui a nacionalidade da bebida não importa muito, a principal preocupação é com a qualidade, sabor e a preparação de drinks com ingredientes frescos, muitos cultivados ali mesmo no Chipe Libre.
A carta de bebidas é extensa mas a majestade claramente é do pisco com cerca de 65 variedades produzidas entre a IV região do Chile e Ica no Peru.
Assistir ao mixólogo David preparando os elaborados coquetéis é um show à parte.
O chef Eduardo Alexis Santander Escalante é o responsável pela grande variedade de comidas fusion entre Chile e Peru chamada de “Los Sabores de la República“. A cozinha tem porta de vidro e os clientes podem observar o trabalho do pessoal.
Fomos atendidos pelos garçons Pablo e Allan que nos explicaram cada detalhe dos pratos servidos. Como é costume em todos restaurantes de Santiago o couvert chega rapidamente à mesa e não é cobrado. Aqui experimentamos um delicioso Camote Frito (uma espécie de batata doce) acompanhado de Salsa Chipeña, o molho da casa, de sabor complexo e levemente picante.
Optamos pelo menu degustação e tivemos a oportunidade de provar muitos pratos. A dica para quem deseja um menu degustação é ligar com no mínimo 24 horas de antecedência e fazer a reserva.
Nosso banquete começou com Choros Malton a la Chalaca (mexilhões cozidos cobertos com um mix de vegetais) picante e com sabor de mar; Cebiche de Camaron, com o acertado “leche de tigre” fresco feito na casa (resultado de suco de limão, pimenta, cebola, alho-poró, coentro, alho, gengibre e caldo de peixe); Erizos al Matico Chipeño & Crocante de Cochayuyo (uma alga típica chilena, seca e frita).
Para acompanhar um extraordinário Piton Chipeño, pisco de Moscatel, bem doce, com tônica e uvas caramelizadas, tudo muito aromático e delicioso.
Seguimos com Tataki de Salmon & Tartar de Quinoa en Masa Wantan y Salsa de Mango, o salmão é “Dos Deuses”, também não poderia ser diferente depois de ficar marinando durante horas antes de ser cortado e servido; Centolla Magallanica y Panna Cotta de Palmitos en Leche de Tigre, a centolla é aquele delicioso caranguejo gigante chileno, aqui ele vem desfiado e muito bem preparado.
Para finalizar esta sequência: Causas Republicanas, um tipo de sushi peruano que no lugar do arroz são utilizadas batatas. A verde é com molho de espinafre recheado com polvo e a amarela é recheada com camarões.
Deixamos o pisco e migramos para um Villard Expresión Reserve Pinot Noir.
Os pratos principais foram Pulpo a la Grilla y Picante de Papas, um polvo servido com um molho de pimentões vermelhos e uma combinação de diversas qualidades de batatas chilenas e peruanas. Lomo Saltado, Arroz & Papas Fritas, um prato clássico peruano com lombo. O toque de sabor do Chipe Libre é acrescentado no momento em que, ao saltear o lombo, o chef flamba a carne.
Mudamos novamente a bebida, agora seguimos com um pisco Santiago Queirolo, peruano de uva Torontel com processo chamado de mosto venne, de fermentação interrompida, deixando a bebida mais suave e doce do que o pisco comum.
Para finalizar chegou a maravilhosa Degustacion de Postres, com muitas delícias incluindo um Suspiro Limeño de Lucuma divino!
Encontramos no Chipe Libre uma verdadeira República Independiente, muito além do pisco. Descobrimos aqui alta gastronomia em pratos de sabor único, atendimento primordial, ambiente aconchegante e pessoas felizes. Este é um dos restaurantes indispensáveis em seu tour gastronômico por Santiago.

Peavey recomends no boost/gain pedals in the loop on the 5150. So I am actually running my chorus, delay, and noise suppressor in the loop; but run any overdrive pedal in front of the amp. The noise suppressor in the loop makes the amp dead quiet when you’re not playing.
